Since you copy over all the files on the card /boot you may as well use the sudo mkfs.vfat /dev/sd?1 to start off with a fresh formatting on the SSD to eliminate corruption of the file system as a cause. But if it is written to a card then mount that /boot partition on the card and the /boot partition on the SSD and copy the files over and do you edits for the SSD boot and then it should just boot SSD. No clue on the mounting of the image if a loop mount would show both partitions contained inside so the copy could be done.
If as I suspect the firmware files are not there then you need to make a sd card and boot it to setup or probably not as I think of it as the files are all put onto it from the image anyways. How familiar are you with the command line? It is fixable with a little effort. It appears there is problem with the /boot partition where it does not find the firmware files.

So my guess is some update process is expecting the update to come from a sd card and not usb? Not sure why it can't find the firmware.
